Low Carb + High Protein French Toast

This french toast is low carb, high protein and is perfect for weekend brunch, breakfast meal prep or even to satisfy your evening sweet tooth! Satisfy your cravings and reach your goals!

I discovered Chompie’s bread at Sprouts and I immediately thought of french toast when I saw the cinnamon raisin flavor. The macros are insane! 

It is made with vital wheat gluten, so not celiac friendly or gluten intolerant. Otherwise, put this in rotation! It is the perfect answer for sweet in the morning, without going overboard.

What you need:

Get your hands on the bread, and I bet you have everything else already in your kitchen. This one is easy, just how I like recipes. 🙂

Line a baking sheet with foil or parchment. Place the chicken on the sheet and bake 12-15 min or until chicken reaches an internal temperature of 165. Slice and enjoy!



1. Pre-heat over to 375* 

2. Line a 9×13 baking dish with parchment and fill with diced bread. 

3. Cover evenly with brown sugar and cinnamon. 

4. In a mixing bowl, combine egg whites, eggs, milk and vanilla. Pour mixture over bread and bake for 60 min or until eggs have set. 



Top with a few grams of your favorite syrup.

Protein Cinnamon French Toast Bake

  • 14 Slices Chompie's Cinnamon Raisin Bread (1 loaf)
  • 400 g Egg Whites (1 3/4c)
  • 3 Large Eggs
  • 240 ml Unsweetened Coconut Milk (1 c)
  • 96 g Coconut or Brown Sugar (1/2 c)
  • 1 tbsp Cinnamon
  • 2 tsp Vanilla


  • Pre-heat oven to 375* and line 9x13 glass pan with parchment paper.
  • Slice bread into 1/2" chunks and lay into pan.
  • Sprinkle sugar evenly over top of bread. Shake cinnamon, evenly over next.
  • In a mixing bowl, combine egg whites, eggs, milk, vanilla, and cinnamon. Pour over bread. Squish bread down into mixture making sure all the pieces get wet.
  • Bake for 60 min or until eggs have set. Cover with foil for last 10-15 min if starts to brown and eggs need more time.
