Crock Pot Za'atar Butternut Squash Soup made with Trader Joes' new Za'atar Seasoning and Just 5 Key Ingredients

I am obsessed with Trader Joe’s new Za’atar seasoning. I have been sprinkling it on everything.  But I wanted to create something where the spices could really simmer. 

I love this recipe! It is packed with flavor, and also each serving is loaded with vitamins, fiber, and bone broth. Bone broth is rich in nutrients, supports joint health and is known to reduce inflammation of the gut. This has been key for me lately as I have been focusing on my own gut health.

Originally this was created as a stand-alone soup, and 100% is still my favorite way to truly enjoy the flavors. However, it pairs incredibly well topped with meats. This has been a great one bowl meal for us this week topped with both chicken and ground turkey. I simply seasoned with Za’atar, of course!

Equipment

Ingredients

  • 950 g Peeled Butternut Squash Raw
  • 600 g Peeled Sweet Potatoes Raw
  • 200 g Peeled Carrots
  • 4 c Bone Broth
  • 4 tbs Trader Joes Zaatar Seasoning
  • 1 tsp Cumin
  • 1 tsp Pepper
  • 32 g Coconut oil

Instructions

  • Cut skin off and halve Butternut Squash, Sweet Potatoes, and Carrots and place in crock pot.
  • Pour in Bone broth.
  • Add in Zataar, Cumin, and Pepper.
  • Cover and cook on high for 3 hours.
  • Once soft, transfer to a vitamix blender or an immersion blender safe bowl and blend.
  • Add in coconut oil and blend. Or add coconut oil to individual bowls to satisfy personal macros (4g per serving in recipe).
  • Serve into bowls and sprinkle additional za'atar on top.

*Coconut oil: optional to leave out until the end and add to individual bowls adjusting to individual preference and dietary needs.
