Sweet and Nutty

Sweet, but nutty. Honeynut squash is half the size of a butternut squash but with double the beta carotene and in my opinion double the flavor. 

The skin is very thin, that once cooked it is tender enough to eat. If doing a big batch the oven delivers, but the air fryer hands down gives the best texture. It gets soft and gooey, carmelizing the outside. The salt brings out the flavor and cinnamon tops it off!

I always find myself leaving my pile of squash for the last thing I eat. It is like dessert. 

How to Make:

The air fryer bakes these little guys super quick! Simply slice in half inch pieces, spooning out the seeds in the bottom. 

Spray or drizzle with 2-3g of avocado oil per 200g of squash. Sprinkle with salt and cinnamon.

Lay in a single layer in the air fryer, ensuring they will carmelize and brown. Cook for 7-8 minutes at 400* and they are done!

Equipment

  • Air Fryer

Ingredients

  • 200 g Honeynut Squash
  • 3 g Avocado Oil
  • Salt to taste
  • Cinnamon to taste

Instructions

  • Slice Honeynut squash in half vertically and remove seeds.
  • Slice halves in 1/4"-1/2" slices.
  • Lightly coat in avocado oil.
  • Sprinkle with salt and cinnamon to taste.
  • Evenly spread in air fryer and bake for 7-8 min or until golden brown and soft.
