This is my Favorite Turkey recipe. The lemon just really does something for me. They are so tender! And they cook so quick, making dinner a breeze. 


I love sneaking in some veggies in places like meatballs, because it’s so easy to hide and get a few more in. I often pair with a simple quinoa a roasted veggie, but I just made a Mint Quinoa that is a perfect combo with these Meatballs. The olive oil mint dressing They also are delicious in a marinara sauce with pasta. 

How to Make:

Prep the oven to broil, with the oven rack 6 inches from the broiler. 

Start by finely grating the zucchini into a large mixing bowl. Add in the turkey, along with the oregano, salt and pepper. Use your hands to combine everything together well. 

Form into 12, 3 inch oblong shape meatballs, weighing about 53g apiece. Space them evenly on your foil lined baking sheet. 

Bake the meatballs 5 min on each side, or until just beginning to golden on the edges. 

While they are baking juice the lemons, combining with olive oil and finely chopped parsley and mint. Thin with water to desired consistency for the perfect drizzle.

  • 1 lb 93/7 Lean Ground Turkey
  • 125 g Grated Zucchini
  • 45 g Gluten Free Bread Crumbs
  • 1 tsp Oregano
  • 1/2 tsp Pepper
  • 1/2 tsp Salt
  • 4 tbs Lemon Juice
  • 1 tbs Olive Oil
  • Cluster Fresh Mint
  • Bunch Fresh Parsley


  • Place oven rack 6 in below broiler and preheat broiler to high.
  • Line baking sheet with foil.
  • In large bowl, combine turkey, garlic, zucchini, bread crumbs, lemon zest, oregano, salt and black pepper.
  • Mix well and form into 12 oval-shapped patties, about 3 in long (53g a piece).
  • Arrange patties on pan. Broil until cooked through about 5 min per side.
  • Meanwhile, blend together lemon juice, oil, parsley, mint and a pinch of salt. Adding a few tbs water if necessary until smooth.
  • Drizzle herb sauce over meatballs and enjoy.
  • Serve with veggies or grain of choice. Pairs nicely with quinoa and zucchini.
