Good Bye Mayo! Hello Healthy Coleslaw

A side, a topping, a crunchy jackpot! This coleslaw is the answer to my cilantro lover prayers. It has a nice spicy kick of jalapeno while keeping things fresh with the lime. Dare I say you will never go back to mayo coleslaw again? Top it on these Mahi Mahi Burritos for the perfect dinner in under 15 min.

It is super easy to prep. You assemble it the night prior and refrigerate overnight, which makes it perfect for brunches and meal prep.  

Cilantro Lime Cole-Slaw

SLAW

This comes together so quick! Easy as chopping your herbs. If you are making the fish, hop to the fish and then come back and start the slaw while the fish is cooking.

 

Simply, empty the tri-color slaw into a large mixing bowl. Finely chop a large bunch of cilantro, whites of the green onions, jalapeno and combine into the bowl with yogurt and juice of one lime. Season with salt and pepper to taste and mix!

WHAT KIND TORTILLAS TO USE

I recently found the La Tortilla Gluten Free Tortillas at my local Publix and love them with these tortillas (0p/19c/4.5f). Heating them up for a few seconds on the skillet before filling them with all the ingredients brings the shell to life and is DELICIOUS! Of course, you can use any tortilla. You know yourself and your macros, which is what makes macro counting so great. You can adjust to fit your goals!

THE PERFECT INSTANT POT BROWN RICE

This is more rice than necessary for this recipe, but I always make it in batches so I have it on hand for the week. The instant pot makes it easy to set it and forget it, comes out perfect and there are no overflow messes on the stove. Win Win!

Instant Pot Instructions: 2 cups of rice, 360g, to 2 cups of water set to manual for 15 minutes, then natural pressure release.

*Macro Tip: I add this to MyFitnessPal as a recipe: Cooked Brown Rice with servings 801 per the example to give me the correct macros as I log.

MAHI MAHI

Season the Mahi Mahi with Trader Joe’s Everything But the Elote Seasoning, while a skillet warms over medium heat. When the pan is hot, add the fish cooking for 3 minutes on each side or until the fish os opaque and easily flakes. 

Construct your burrito, layering the rice, the mahi, then the COLE-SLAW.

Ingredients

Burrito

  • 24 oz Mahi Mahi
  • 2 tsp Trader Joe's Everything but the Elote Seasoning
  • 240 g Cooked Brown Rice
  • 4 Soft Tortilla

Cole-Slaw

  • 16 oz Tri Color Coleslaw
  • 3 Green Onions
  • 25 g Fresh Cilantro
  • 75 g Fage 2% Greek Yogurt
  • 1 Lime
  • 1/2 Jalapeno

Instructions

Mahi Mahi Burritos

  • Prepare the rice according to the instructions. My two favorite options are the microwavable bags from Trader Joes and the Instant Pot.
  • Instant pot rice option: Manual set to 15 min than natural release. (1:1 rice:water)
  • Next warm up a skillet over medium heat.
  • Season the mahi with the Elote seasoning.
  • Add the fish to the hot pan, cooking for 3 minutes, then flipping and cooking an additional 3 minutes or until the fish is opaque and easily flakes.
  • While the fish is cooking, prepare the slaw.
  • To finish warm the tortillas in the skillet to soften and construct your burrito. Layering the rice, then mahi mahi and top with a heaping scoop of Slaw!

Cole-slaw

  • Empty the cole-slaw into a large mixing bowl.
  • Finely chop a large bunch of cilantro, the white ends of 3 green onions and 1/2 of a jalapeno and add to the bowl.
  • Add in the yogurt.
  • Squeeze the juice of one lime.
  • Mix well. Season with salt and pepper to taste.
