Summer Macro Friendly Dessert

Summer berries are the best berries and make for the perfect summer macro friendly dessert. This rhubarb crisp gives you that sweet with a little bit of tangy, and crunch with power packed oatmeal. 

Rhubarb fresh from my sisters garden made this extra delicious. Get your hands on whatever you can find this summer, which hopefully means a trip to the strawberry fields.

 

Made with both coconut sugar, which has a lower glycemic index and with coconut oil, you will still be feeling your best when finished. And with macros like these, it can not be beat.

Strawberry Rhubarb Crisp

Ingredients

Rhubarb

  • 300 g Chopped Rhubarb
  • 450 g Chopped Strawberries
  • 36 g Brown Coconut Sugar (3 tbsp)
  • 1 tbsp Cornstarch

Crisp

  • 80 g Oats
  • 30 ml Coconut Oil (2 tbsp)
  • 1 tsp Cinnamon
  • 12 g Brown Coconut Sugar (1 tbsp)
  • 1/4 tsp Salt

Instructions

  • Preheat oven to 375*
  • Chop rhubarb and strawberries into 1/2" pieces.
  • Coat with coconut sugar and cornstarch.
  • Place evenly into 9x13 pan
  • In a mixing bowl combine crisp ingredients.
  • Sprinkle over strawberry rhubarb mixture.
  • Bake: in convection oven 15 min. In Standard oven 30-40 min or until rhubarb is soft.
